  4. GrillGrate send me one of their new GrateGriddles to play with. I blackened a NY Strip on it. The steak turned out nice, but I cooked it a tad too much for my taste. This is a sweeeet product and it will interlock with their GrillGrate units. I'm going to be having some fun with this.

    Heisenberg is dead. My new avatar is a photo of my wife, in silhouette, with a cocktail in one hand and sunglasses in the other, taken in Negril, Jamaica, on our honeymoon, many, many years ago. For the record, she was not stoned on Jamaican Ganja(she pleads the 5th Amendment), just a little under the influence from several Yellow Birds, and a couple of Red Stripes.

    Smoked Almonds

    Here's a super-easy way to put together some snack food that will blow you away! This is also something that's easy to do after a longer cook while your brisket or butt is resting.... What you need: Raw Almonds Peanut Oil Seasoning Blend of your choice What to do: Preheat your Kamado to 250-275 degrees and add some smoke wood (I used apple) Coat Almonds with peanut oil (1 tsp oil per cup of raw almonds) Coat oiled almonds with seasoning (1 to 2 tsp per cup of almonds) Smoke on the grill for 25-30 minutes Let cool and serve!

    Kamado Joe was very straight foward in the fact that they don't want me to change anything about my approach with the instructional nature of the videos. The branding on the videos has changed. I won't be making cooking videos on anything but KJ grills. The content remains the same.

    A very good and instructional video, John. Teaching people how to prepare delicious food at home is really what it's all about. In Man Cave, it was clear that you endeavored to take the mystery out of good BBQ and using a kamado cooker. I am very pleased to see that KJ has continued your approach.

  9. The marbling is awesome! It's been a long time since I broke down beef but the grain and marbling looks like it's from the shoulder area, like shoulder clod roast or somewhere near it anyway. That should be some tasty beef. By the way John, Who's not a Hank Hill fan? Hand is the man, even if he is misguided on the charcoal issue.

    LOL Turkes! A few years ago two of my cams caught a hot air balloon landing in one of my fields/food plot. The pilot left a note telling me who he was, and that one of his passengers was getting sick, so he landed. He left me his phone # and told me to call him. He later gave me a great balloon ride.

  16. $700 or $800 is not the point. The point is that it includes the heat deflector, pizza stone, and cover. That's over $150 worth of extra accessories, so he is actually paying less than $650 for the Joe. That's a good deal for that quality of a ceramic kamado. Kamado Joe is coming out with new features on their Classic's and BigJOE's in 2014, so some dealers are cleaning out their current inventory, much like car dealerships do each fall.

  23. Looks great and the potatoes do also. 300-325 is the temp I cook mine at now too, just didn't see any difference to warrant the lower temp for pork butts. Turns out just as good and far less time.

  26. Several years ago I did two chickens on beer cans side by side on the kamado. One can was empty and the other was 3/4's of the way full of beer and various spices. There wasn't any noticeable difference in either one. Drink the beer and dry roast or grill your bird.

    Or you could spend the money once and not have to get rid of an extra BBQ later on, whether it be to a friend, a stranger or the trash man. Just saying. This isn't medical school, it doesn't make sense to practice on a cadaver in hopes of one day moving on to the real thing. If you want an Akorn, get one, but don't do it because it's going to be a temporary grill. That's my 2 cents.

  30. But your local mayor is one Mrs. Hazel McCallion, who's been there like forever. She was mayor before I moved to Mississauga, for the 13+ years I lived there, and she's still in office today, another 11 years later. Someone should come up with a Mel Lastman Signature Pork Butt recipe.

John, the fellow who made them, was recently hired by Kamado Joe to make videos for them. Part of that agreement included taking the Man Cave Meals channel down. A terrible casualty indeed, but that's what happened.

  35. What a coincidence that I also ended up doing ribs on the PBC like John. I'd like to report that my PBC rib cook went well also. My narrative skills aren't the greatest so I'll let the pics do the talking for me. Did a rack of spare rubbed with PBC all purpose+Plowboys yardbird and a rack of baby back rubbed with Sweet Mesquite (real good stuff) from Costco I use a chimney to start the fire instead of lighter fluid Filled the fire basket with the lit briquettes and threw in a few pieces of hickory I had lying around I use this tool to lower the fire basket in. It's called the OTT grate lifter and I bought two already. Real nice guy named William Ott from N.C. that makes this by hand. Not affliated or anything but he's on ebay if anyone wants one. It truly is multipurpose. I used it from my grates, dutch oven and now on the PBC. Anyway, back to the cook. Time to hang the ribs. I also seasoned and hung some potatoes with EVOO, salt, pepper and garlic powder on one of the set of skewers I had laying around which fit the PBC perfectly. Ready to go in. Better shot of them. Time to let the PBC do it's thing. Yes, as simple as that. I know a thermometer is not necessary on the PBC hence the simplicity but I still like to have a rough idea of where I'm at so I installed one. Steady cruising at 275ish with the cover on. At this point I had to leave to house and no one to watch the cook but I was comfortable. I came back at about an hour and fifteen minutes to find it still cruising along and the neighborhood smelling like ribs. At 2 1/2 hours the baby backs were done. I let the spares go for an extra 45 mins, pulled and sauced them and put it back for another 15 or so mins. The potatoes are ready as well. Some shots of the baby backs......Came out juicy! Nice bite through Clean off the bone Time for the spares Side of slaw and the potato. Potato was unbelievably good with a nice smoke flavor like the ribs. Needless to say dinner was GUUUUUUUUDDD!! I'm honestly more impressed with the cooker than I ever expected to be. It's simple to start, easy to work, easy to clean and puts out amazing food with minimal effort. I'm starting to feel guilty that I scored this puppy off CL instead of buying directly from Noah/PBC. Hope you guys enjoyed.
