    Introduction!

    I see the site asks each new person to introduce themselves. So, I will! I’ve been smoking for awhile now. But I’ve been using a Bradley electric smoker. Although I’ve enjoyed the Bradley, I’ve really always wanted to try one of the ceramic charcoal smokers. I was recently walking thru the local Cabelas and saw a KAMADO Joe Classic II on sale for about 45% off! They were closing them out. I couldn’t pass it up! This weekend I’ll be smoking my first pork butt on the Joe. I saw this website mentioned on a video so decided to look it up. I’m looking forward to trying some of the recipes on this site!

  3. I have used Japanese water stones for decades now. They should NOT be dried out between uses, and in fact should be stored in water. Tom
