  1. They do not make the original style firebox anymore. You should replace it with the multi-piece firebox. I am not sure where you can buy one other than directly from Kamado Joe.
  2. I have been told that the issue is not a supply issue as much as a demand issue. The manufacturing is running at nearly 200% normal capacity. The demand has been too high for the supply this year.

  4. I have been following a guy for a while now who keeps his starter in the fridge at all times. He keeps a container in his fridge with 300g of 100% starter in it. When he wants to make bread or pizza, he pulls out however much he needs to make his levain and then just adds that much back to his starter and puts it right back in the fridge. He bakes several times a week.

  6. This is an accessory for the Joe Jr. That's its primary function. A secondary function is that it will sit on the lower ring of the Classic rack if someone wants to cook on it down there. I used it as a heat deflector for a pork butt cook overnight and it worked really well.

  8. @GiffS You are correct. If you want to use the grill extender you need to take the SLoROLLER out.
  9. Yea it sucks. The original plan was that black would be available as warranty replacement. That has changed as has the ownership of the company.
  10. I am gonna set up my Classic 3 and run an overnight cook on a pork butt with this configuration using the sear plate as a heat deflector...

I would open a new claim for your warranty and indicate in that claim that this part is warrantied for three years and provide them with this link as well. Customer service at Masterbuilt/Kamado Joe appears to be under the control of aliens who do not understand the product and don't know what the actual warranty is these days. It's a sad situation and it doesn't appear to be getting any better...
  12. Reminds me of a good friend of mine... He always used to complain about my restaurant choices being too expensive. I told him that I preferred the atmosphere in the places I chose.... he responded with "ya can't eat ackmosphere!" So... ya can't eat COOL!
  13. @Graham you can cook them like you would any other steak. Reverse sear isn't a bad option if you want your steaks to have a smokier profile. You can also sear them first and then finish them over indirect heat to your desired temp...
  14. @adauria I think you will be fine with a Kick Ash Basket also... it's gonna last a long time. Have you seen the Kamado Joe charcoal basket?   16. There is some physical difference in all three. Not a lot of difference between the 1 and the 2 but the 3 has a bit different size and depth than the first 2

  22. It doesn't fit on the d/c rack anywhere but the lowest ring on the classic rack.
