I did a Boston butt smoked it for 9 hrs with hickory chips and apple juice in the drip pan used Webber Mesquite rub and quart of injection 1/2 vinegar and lemon juice. It turned out great family said it was the best they have ever had. But going to try all the suggestions.

Ok folks I'm up against the wall. Tomorrow is our family reunion I had planned to cook - smoke two tri-tips, my butcher let me down... so I guess it will be pork again this year and be up half the night. Anyone have suggestions for beef that is comparable to tri-tip in tast, tenderness and time? Any help would be greatly appreciated. Ronny

Happy 4th everyone, I have started the cooking two Tri Tips in the Vision one trimmed with all fat removed, the other just cleaned up fat cap left on. Trimmed seasoned with Webber Mesquite seasoning, the one w/fat cap on covered with salt, pepper, and garlic and wrapped in plastic wrap both were rubbed with evoo and placed in the fridge overnight. They were removed from the fridge 11/2 hours prior to start cooking. Cooked for almost an hour checked internal temp, was 153 in smaller Tri-Tip and 149 in larger roast, was told 130 was medium rare I had flipped them about 30 minutes in. Both turned out great, the smaller one with Webber Mesquite was like my brisket but I will leave the fat cap on next time. The larger was very moist and tasted like a traditional roast. Note to self-leave fat cap

Cook her a good meal, Do the dishes,tell her you love her. Now about the supercharger, what you putting it on? And really check out the kick ash baskets I have a Pro S and they don't have a basket to fit it ( they say they do but it is a horrible fit)

Well it was my first today, Pizza cooked three pies Loaded, Pepperoni and cheese, Veggie in that order. Cooked on Vision Pro S w/ adjustable rig 450/500 temp. Don't forget the corn meal!!! Pies tasted great, first was a little over smokey tasting because of some grease still on heat deflector but still very good. As I said earlier don't forget the corn meal use it everywhere, when spreading dough out, when cooking on stone everywhere. It's been a good learning experience. Sorry couldn't get all pictures to load.

Hey Folks, Just emailed Chad at Kick ash Basket, told him I own a Vision Pro S and would like to purchase a basket for my grill ( have purchased two as gifts for friend who own BGE) he ask if my unit had the slot for the ignitor which it does. I told him I had used it twice thought it started a larger area of fire quicker but was willing to do away with the stainless steel cover and the ignitor to be able to use a basket. How does everyone else feel? He said he would have considerable problems building one to allow the use of the electric ignitor. Waiting for in put. Thanks, Ronny

Want to start by thanking John Setzler for his turkey recipe (Sage,Rosemary,Tyme & unsalted butter) made a great bird, which made for a good Thanksgiving. Thanks again John. Now For Game Day! Roll Tide! Based this cook off the 3-2-1 but shortened the time by about 30 min. on each, my temp stayed pretty steady. All in all a learning experience and a tasty one at that! Ribs on for about an hour. Ribs ready! First time for Turkey & Baby Backs on the Pro S I think I'll keep it.

My grill is like yours the grill is great the table leafs clear coat are starting to crack, very very thin.

Alabama won good game, good friends and good food doesn't get much better. Still learning, Chops were good little over done, I think I'm trying to hard for the grill marks and grill cooks faster than I am use to. It will come in time. Coals don't burn all the way out to the edge, leaves a ring on the outside all the way around. I lit my fire in two places 12 an 6 every thing wide open when coal had caught good closed lid vent wide open, when temp reached 225-250 I started closing things down settled at 350 - 400 started cooking when finished closed everything down. Started with full bowl of charcoal. Any advice?

First steaks on my new grill. They got a little over done for my taste medium rare but daughter and rest of the family thought they were great.
