  1. Ok, I have now cooked quite a few different meats on my CGK ... My problem is keeping the charcoal lit when the temp is under 300 ... Anything above that and this thing cooks like a dream ... But low and slow is a constant battle ... Based on my home design, I get very little wind so I have learned that I need my dampers open a little more than most of you guys seem to need ... But under 300, we are either climbing (getting hotter) or dying (temp falls really fast) ... I am also having trouble staying lit unless we use the chimney and light half the lump at the start ...   2. Mixed 1 lb of finely diced bacon tips with 1 lb of ground chuck ... Made 8 small burgers on my CGK ... I put the coals on the diffuser rack and got the heat up to 500 degrees before putting on the burgers ... Not one single flare up ... And some really awesome burgers ...   5. We need a tutorial ... I have now cooked 3 nights in a row but I don't think I am really 'controlling' the heat as much as I am just fighting to keep it right ... lol I will say that completely closing the vents IMMEDIATELY knocks out the fire when it is flaring up on your steaks ...   12. http://www.walmart.com/ip/Backyard-Gril ... r/19525225 The pictures show what appears to be a stainless cable looking wire ... But mine is black rubber coated like a headphone wire ... Must be some silicone thing ... It wasn't barely warm when I used it to 'test poke' the roast ... No glove or rag needed ... And I have girl hands ... lol ...   16. So is there a right and wrong place to put the thermometer ??? Although it clearly states 'stainless steel probe wire' ... when it came out of the package, the whole length of the wire is coated in a rubber sleeve ... So I was worried it might melt on the cast iron grate and I decided to hang the thermostat down through the top vent so it is dangling in mid-air right above the roast ...   17. This weekend we bought the Char-Griller King Griller Kamado Kooker ... CGK so I never have to type all that again ... Anyway we seasoned it yesterday and I wanted to jump right in this morning with a 5lb Pork Roast ... I have been grilling all my life but have never done much smoking or slow cooking (I know ... How can I claim to grill w/o either of these) ... Anyway, I went out and bought some RO Lump Charcoal, Hickory Chunks, Charcoal Chimney, Wire-less Thermometer (should have bought a dual but they didn't have them), a cheap-o pizza pan and cheaper drip pan ... All from Walmart for about 40 bucks ... During first hour the CGK got up over 300 while I ran out to return rental car and get batteries for thermometer (duh) ... But closing dampers has it coming down nicely ... 320 to 260 in 30 minutes ... A little more and I will adjust slightly to hold temperature at 240 ... Anyway, so far so good I guess ... I will have to open her up to check the meat temp later with an instant meat thermometer but that can certainly wait a few hours ... Sorry no pictures or video ... I was scrambling to Walmart just to get this baby started so we can eat it tonite after my daughters softball game ... Thank you all for this forum as I was up half the night reading and watching videos ... So I am tired but happy ... This place has great info for anyone ... Rookies & Pros !!!
