    Haha, I finally got around to getting a platesetter for my mini!  Splurged and got a new ring and firebox too!  Love this little guy.

    Fired up the KJ Classic and the Mini BGE today.  In the Classic I cooked up a nice meatloaf and in the Mini I did a “California Roll”.  The California Roll is something our local butcher makes up pork tenderloin seasoned and wrapped with chicken breast then bacon.

    Made six pizzas on by Classic and my Big Joe last night.  Turned out great.  Temps were 450-500. I’m learning to let the kamado(s) come up to temp slower and spend more time heat soaking.  Also, to reduce stress and avoid ruining pizzas, I set the oven to low broil in case there’s a need to finish the top more so people will get desired crust...finishes perfect and you still get that same great taste.

    Well 10 hours and it's done, average temp between 250 and 275 most of the night with the odd fluctuation a degree or two either way. By the looks of it there is still enough charcoal it could have gone another 4-5 hours, so I estimate a mini could in fact maintain 250 for 16 hours total in the right conditions, which I find pretty impressive.

    This beauty will rest for a couple hours in Apple juice and cider vinegar wrapped in foil and a towel, then be pulled and taken for lunch while we wait for the fish to bite.

    Tonight I decided to try something new, I've always used the mini BGE for quick searing and 2-3 hour cooks. Tonight since the butt I had in the freezer was smaller than I remembered, I decided to give an overnight low and slow a shot in it just to see if the charcoal capacity allows, or if I will be up in a few hours refilling it. It sparked the barn cats interest and I got stuck with company as I was loading charcoal and cherry wood chips.In the morning I'll post results

    Nice round pizza!  As you can see ours was not quite as round, not even rectangular, shaped more like an amoeba.  Delicious nevertheless.  
     
    This was our second pizza fest on the Classic II with the fourth and final pepperoni pizza pictured.  I lifted the stone with two fire bricks about as high as it would go into the dome before the pizza would hit the temperature probe.  Crust and top finished nicely in sync together.  
     
    Brought the dome temp up to around 700F with the pizza stone registering 575-600F+.  At 4 minutes I gave the pizza a 90 degree turn and they were pulled off at 6 minutes.
     
    Told the wife I like round pizzas - she told me to shut up and get out of the kitchen.  So I went back out to the fire with a nice cold IPA.

    Truth right there!  Our Christmas turkey although was good tasted way better on Boxing Day. 
     
    Good post @JeffieBoy!  Good on ya for taking our Ontario lockdown seriously.  It really boiled my blood yesterday to have a porch visit in the cold so the in-laws could see the kids open their presents only to see a pile of cars at the neighbour’s house.

    Here are the results of my charcoal testing:

    Longevity Testing:

    My longevity testing was set up by weighing out 2lbs of charcoal into a small charcoal basket.  I put that in my Kamado Joe Classic 3 grill.  I used a propane torch to light the top of the basket for 45 seconds.  I installed the heat deflectors, grill grates, and closed the dome lid.  I opened the top vent to the first mark.  I used the FireBoard 2 Drive to run the grill at 300°F with the fan set to run at no more than 20% of it's maximum capacity.  The times I measured were the times it took for the grill to hit 300°F and then how long it stayed at 300°F before it fell back down to 280°F. 
     
    Max Temp Testing:
     
     
    I measured and setup the grill with 2lbs of coal the same as before and lit the grill the same as before.  I opened the top vent FULLY and engaged the FireBoard 2 Drive fan to run continuously at 100% capacity.  I measured the time it took the charcoal to get to its maximum temperature and what that maximum temperature was.

    There are no photos included with the Kamado Joe links above because I was originally going to make this into a video and I used that charcoal in the video.

    I paid full retail price for all the charcoals that were used in this test except for the Kamado Joe Big Block.  I was given a supply of Kamado Joe Big Block in the past that I have not extinguished yet.  

    I tested each of these charcoals in equal circumstances to the best of my ability.  I am not offering any opinions on the results I measured.  The reason I decided to conduct these tests was to satisfy my own questions that arise when I hear someone say that their favorite charcoal burns hotter or longer than something else.  This testing also gave me the first hand experience I needed to determine which charcoal I will buy for myself in the future.

    The little fella got an upgrade today!
     
    Added a perch and carry handles to the mini’s stand. Next step is clean up the tired handle and then wait for the new guts I’ve ordered to arrive.
