  1. I absolutely LOVE my KAB. No doubt it will pay for itself because I'm not breaking down the used coal at the next cook. Simply a few shakes and then add new lump to the top. I've removed the bottom grate AND the ash pan. I find it now comes up to temp much faster. Another advantage - i find temps are far more stable. Last few cooks I barely touched the daisy wheel!   6. Thanks for this great idea. I've had my KJ for about a month and eyeing the prime rib each time I'm in the grocery. Just can't justify it until I entertain a larger group. But this...well I can justify "practice" with a lower cost meat! Can't wait to try it. Haven't done potatoes yet but I wonder if you would have had less smoky results without putting them on while the white smoke was rolling? Next weekend I will be giving this cook a try.   10. The restaurant is amazing. 3 months later I bought a kamado. Their Gouda mashed potatoes are incredible. I have the recipe but it only seems to be the ingredients.   11. So glad to have found this forum, although I'm not real certain I'm posting correctly. I was introduced to kamado grilling several months ago while visiting Raleigh and the restaurant Kamado Grille. Fast forward 3 months later and I am now the proud new owner of the KJ Classic and loving it! Still lots to learn and reading through many posts and watching a ton of John's you tube videos.
