  1. I am not a fish eater, but would like to acquire a taste for it using my kamado. Do you guys have any suggestions for this endeavor? Cookbooks, receipes, videos, personal experience, etc.

  3. I'm two weeks out from rotator cuff surgery. I'm trying to make dishes that I can freeze since I will be in a sling for six weeks. Today, I'm making 1) beef stew; 2) smoked chicken enchiladas; and, 3) green chili stew. I plan to freeze most of the cooks. What else have you cooked that can be made into small meals for freezing?   4. I purchased my Smoke six weeks ago. I constantly struggle with the device. When I first plug in the device, it indicates no probe is attached. This continues for about 30 to 45 minutes. Once it recognizes that a probe is indeed attached, it then becomes an intermittent connection. I've thought about contacting the company for help, but I've been very busy at work. Also, the temp on the Smoke is always about 50 degrees higher than the thermometer on the KJC. Overall, I'm not satisfied with the device.

  8. I have never cooked a Prime Rib before. Tonight I tried it on the Joetisserie. It wad awesome. I cannot believe how well it turned out. The flavor was off the charts.   11. Just put a hearty beef stew on the KJ Classic. The artic front is blowing through North Texas. Going to be a good time for beef stew. First time trying a stew on the KJ.   12. I'm going to cook a batch of borracho beans in a dutch oven this afternoon. Would you use the reflector plates or cook on an open fire?
  13. I have had my Kamado for four months and I think the two biggest draw backs of a Kamado compared to my Weber are the time it takes to heat up and the time it takes to cool down. Otherwise, the thing is about darn perfect.
