    Steaks turns out great. Very tender. There was only a slight taste difference. I think the next dry age I will go for an extra week or two.

    It's finally done! 19 total steaks. Most were cut an inch thick. Kept a couple out to cook tonight. (I'll post how they turned out for the cook). The rest were vacuum sealed and put in the freezer.

    Photo from 1-16-2017. I will be unwrapping and slicing this Friday. Will put it at 36 days. I will upload photos of that after I finish.

    Day 1... got it going for at least 35 days. What are the average results for that amount of time? Should it be longer? Fridge is showing approximately 34 F. Wish me luck!

    Just got my UMAi bags in! I have been reading a lot about this topic from you guys. Gonna try my first dry aging process. Wish me luck and I'll try to keep it updated throughout. Will pick up the meat this weekend and get started. Any help/advice is greatly appreciated.
