  1. I've tried it with and without a can of beer and I rekon there is a clear difference in the moisture of the meat. I pop half a lemon inside to and season with lemon grass and salt. Yum!
  2. Hey all, after many years of service with our traditional Webber I've finally been able to upgrade to a Big Joe. We are very excited and it arrives Friday. We are fortunate to have a mixture native banksias, oak, iron bark and red gum at our disposal so I have been experimenting on basic smoking with different meats in a haphazard manner for a while. I'm really looking forward to learning how to utilise the slow and capabilities of the big joe with larger cuts of meat and different wood. Lots to learn! As I run a cafe business which is mostly short order my passion is for slow cooking (not fast anything haha) when I'm not at work.
