  2. I've had good results with fresh turkey doing it spatchcocked. Brining it overnight. It seems to cook evenly and is always juicy. Sent from my iPhone using Tapatalk

  7. Pulled my two pork butts off at 7:30 am yesterday. Put 3 racks of pork ribs on at 8:30 am family over at 3:00 to eat. My Vision Pro S was purring along so well I decided to throw on some brats and dogs as well. During the overnight cook of the butts it was very hot and really humid out and no sir movement at all. I had to tweak it more than usual it seemed but it all worked out except for the little sleep I got. Don't know why I haven't cooked ribs before but this was my first. I cooked them at 225- 250 grate temp for 5 1/2 hours. I and my family like ribs pull of the bone tender vs competition style. I lightly rubbed some yellow mustard and used a local Restaurants rub instead of my own mix. Q's BBQ is owned by Tuffy Stone ( pit master judge and chef) his rib is excellent. At about 4 1/2 hours in I applied a little parkay and 30 minutes some BBQ sauce. The one mistake I made in my haste was not thinning out the BBQ sauce a little before mopping it on. So the sauce was a little thick. After the first two hours of cooking I started spritzung the ribs every 30 minutes with apple juice. I appreciate this forum for help with cooking Happy Independence Day to All!! Sent from my iPhone using Tapatalk
  8. Thank you for your reply that's what I was thinking but sure did not want the fire to diminish halfway through the rib cook. I do plan on putting on the ribs around 9:00. But it's all family if we don't eat until 4. I am well stocked with beer. Thanks agsin Sent from my iPhone using Tapatalk
  9. I will be putting two butts on my Vision Pro S around 9 tonight. Tomorrow morning when I take them off. I need to set up to cook some racks of pork loin back ribs. I've never done two cooks that require as much time before. So my question regards adding more lump to last for the rib cook. Is is just after taking off the butts adding more lump to the existing coals and stabilizing the temp again, or is there more to it? I have family coming over around 3 in the afternoon. 12. I've had my Vision Pro S Series for almost 2 years and Love it. I have many friends with BGE and I actually think the Vision Pro S is not only comparable, but some of the features I like. The ash drawer is very convenient and the slot for the electric starter for when you want to use it is nice. THe numbered air vents are nice for setting up cooks. I have tried many brands of Lump, but for me, I keep coming back the BGE Lump. I know its made by Royal, but I think the quality is a little better. My Lava stone has held up so far, but will probably get a spider in the near future. Definetly get a couple good bluetooth digital probes. I've done many long cooks averaging 12 hours and the temp held constant throughout. Needless to say, I think you made a great decision and I'm sure your boyfriend is going to be crazy excited.
  13. Hello From Virginia !!! I bought a Vision Professional S Series a little over a year ago and have been really impressed with this "cooking machine" Looking forward to learning from experiences of all the great Kamado Cookers. Here's a few cooks I've done.
