  11. I will try the butcher paper on my next brisket, thanks motabbq. I have not done a brisket on my KJ yet, since I just purchased it last month. I am like you and always have used a smoker. Sent from my iPhone using Tapatalk
  12. Beautiful Ribs and Brisket, Texan here and have always used foil for my wraps. Explain the difference in using butcher paper over foil, please. I know its a preference for some, some say it helps keep the bark nice, just wondering. I have never tried it but saw Aaron Franklin uses it on his briskets. Thanks
