  1. Yesterday I had some starter to use up, so I went with 1-2-3 sourdough version of “pain de campagne” My version is 65% AP flour, 20% whole wheat, and 15% medium rye flour. It works out to about 68% hydration dough. 2% of the flour weight in salt. I like the flavor, but I may go back to the 70-20-10 blend I used before. Got a little “oven spread” on the Batard.
  2. If I remember correctly, the Akorn Jr is only 13” in diameter. Not much wiggle room with a bigger wok. Avoid stainless steel and non-stick woks. Purchase carbon steel or cast iron. As fo a lid, I have found that my 12” skillet lid works really well.

  4. I love my Primo Junior. They do actually sell a cradle for it, so it can be somewhat portable. (2 people). A Big Green Egg Mini-Max is also pretty good. I cooked on a friend’s once, and really enjoyed the experience.
  5. I would like to see the actual grill before I purchased it.
  6. I saw the same deal at at Lowe’s. The differences I noted were the vent cap, and the lack of the spring loaded hinge.

  8. I started with the Akorn and I don't regret it at all. I have had it for 2.5 years, and I have done low 'n slow, hot and fast, and really hot for pizza. I put a gasket around the bottom, where the ash pan clamps on. I have also replaced the cast iron grate with a stainless steel one from Amazon. The Akron does pretty well with temp stability. It is not the best, but it is great for deciding whether you want to get deeper into kamado land. And it is definitely the lowest price point.
  9. I have had good experiences with Rockwood charcoal, both in my Akorn, and in my Primo Junior.

  11. What size is the pizza pan? Your Akorn cooking surface is approximately 20" in diameter. I use a 15" round stone on my Akorn all the time, and it fits quite easily.
  12. My band bolts were nowhere near that bent. But I took the thing apart to move it, since I was not going to try and move a 115 Lb grill by myself. That is most likely where the problem was. I did understand what you meant by "wallered out." So I guess I'm a redneck!

  14. I think what was happening is the hinge was a bit sticky, so not moving all the way forward. I tapped on it with a hammer, and it loosened up a bit. I used Junior for a pork shoulder on Saturday, and had no issues with him. My band bolts may have been too loose also. I looked at an online manual from Primo, and it actually says to tighten the bolts until they bend a little. Who knew? I was afraid of over-tightening them and cracking the ceramic.
  15. I will use a vertical rack for chicken, but I don't waste the beer anymore. I have done comparisons, and I don't think the beer can does anything for the chicken. Spatchcocked, or halves. You can always marinate the chicken in beer. Personally, I'd rather drink the beer.

  18. Does Primo Junior need dome and body gasket, or just one gasket?
  19. Is it just me, or does the Primo hinge design stink? I hadn’t used Junior in about two weeks due to a business trip. I started him up last week, and I could not get the lid to close correctly until I wrestled with it for about ten minutes. The hinge always seems to want to keep the lid pulled back. I keep the hinge lubricated. I have tweaked and adjusted until the cows come home. Any ideas? Anyone want to buy an Oval Junior cheap?
