    Here is todays experiment... Pork Neck low & slow... this one is for my wife's birthday dinner tonight... The rub is fairly conventional pork rub...but I am a bit excited to see how pumping the meat with our Amaro " Calliope"... it is a balance of sweet, sour and bitter herbs in a brandy base... My Joetisserie should arrive this week...looking forward to trying Gin infused chicken. Distiller

    The marinade is a store bought Char Siu sauce made by " Lee Kum Kee" I have used it for years for pork neck to make BBQ pork for stir fries... I am only just starting to use it on larger cuts...the customers love it.

  6. Well my baby arrived just before a rain storm...but trust me that did not deter us.... we were going to do a Char-Siu Pork as or first run but my wife Lyn has put in a request for pizza...so pizza it is. Distiller

    Jeff we use a lot of our spirits in cooking and one of Australia's best chefs Matt Moran has cooked with our spirits...mostly we pump/inject the spirits especially our triple sec/brandy liqueur and our Coffee and Maple Syrup liqueur.... The Coffee and Maple syrup we pump into Turkey breast which we cook in our smoker san's smoke we coat the breast in cranberry jelly...the coffee caramelises over time and infuses with the meat ...the maple just gets on with mapleing and the world is good.

    It is sad as we used to export a bit to the U.S and we have many friends there...we just seem to be in a bit of a trade stand off with spirits....hopefully it will resolve itself.

    The powers that be make it very hard for us to export to the USA... it is just not worth jumping through all the hoops. We sell more to Europe and Asia...but our main market is Australia.
