  2. That sucks to have to wait that long and the troubles, but that is a nice no cost upgrade for you if they do follow through.
  3. Well that was way easier than I thought it would be. really helped taking the dome off first. This is a first gen Big Joe, but when I was sent the replacement new style hinge I wasn’t told I also needed the new wire mesh gasket. Got it as a warranty replacement as I had a 1/4 inch gap at the back of the dome with the old felt gasket. No elaborate setup needed, just take some time. I used a really small bead of permatex copper as recommended and had both on in about 10 minutes time. Now I just need to figure out how to get rid of the overbite. No matter what I do, as soon as I reinstall thee hinge and tighten, it pushes the dome forward. I am sure it is not a big deal, but if anyone has figured out how to adjust it would be great to know.

  7. Anyone else ever cook any black cod/sable fish? I got some from a neighbor, looked up a few ways to prepare and decided to go with a simple cast iron cook on the Joe Jr. Washed the fish down really good, patted dry and used a little oil with salt and pepper then dropped in the skillet. Had a bit of cherry wood in. Nice and flaky, almost buttery texture. My main question is does this fish retain a fishy taste and smell. This one turned out very strong flavored of fish. Not sure if it was just my prep and cook.
  8. Got my Blackstone griddle this week, seasoned it up and cooked some breakfast this morning. Main use for this will be camping, but I am sure I can find more than a few things to use it for around the house. This little thing is gonna be fun to use.
  9. Not sure if anyone else has tried theirs but thought I would post as it opens up some cooking room when using the BigJotisserie. With the flat OneGrill basket I can still put my grate in the lowest position and cook a side dish at the same time as the rotisserie is going. Cooking some cast iron potatoes at the same time as some chicken breasts.

  12. Looks awesome! I just ordered a Blackstone 17 inch portable griddle to use around the house and take camping. Can't wait to start using it.

[/url] Marinade 3 tbsp Achiote paste - I had troubles finding so I ordered from Amazon. https://www.amazon.com/gp/product/B0000GHNVI/ref=oh_aui_detailpage_o00_s00?ie=UTF8&th=1 2 tbsp chili powder 1 tbsp garlic powder 1 tbsp oregano 1 tbsp cumin 1 tbsp salt 1 tbsp pepper 3/4 cup vinegar 1 cup pineapple juice Mix all those together really well, blender would work well to help break up the Achiote paste. Slice the pork shoulder thin and marinate for 8 hours Then I sliced a pineapple into rings and put it and the pork shoulder in the spit. 350 for about an hour and 20 minutes. The Guacamole salsa I used was really good stuff. Here is a picture of it.
