  1. Last nights cook on KJ Jr - decided to do a whole chicken - spatchcocked. I used Angus & Oink shawarma rub with olive oil and fresh lemon juice to marinate for around 4 hours then into the KJ for around an hour and a half - internal temp 75 degrees C - Joe was running at around 190 degrees C (400F). Made some Baba Ganouch and Middle Eastern salad. All went down rather well!!!! video_704005ed4b564a04afe9ddec3b0da3b8.mp4

  3. Here’s another of my recent Joe cooks. Chicken shawarma - chicken thigh meat, skewered with red onion and green peppers. The meat was marinated with Angus & Oink shawarma rub, olive oil and fresh lemon juice for around 6 hours. Unfortunately I didn’t get any pictures on the Joe as it was too dark. Came out really tasty - served with a Middle Eastern salad and wraps. Dinner anyone??
  4. I decided to cook a couple of lamb breasts and found a great recipe from Josh Katz cookbook Berber & Q (he's co owner of the same named restaurant in London). This recipe uses lamb breasts stuffed with Moroccan spiced minced lamb with pistachio nuts, apricots, garlic, breadcrumbs etc. Slow smoked on the Joe Jr for around 7 hours - came out very well.
  5. Many thanks for the welcome. It was a lovely piece of pork. The cut (Boston Butt) is not really well known in the UK - I think we call it collar / shoulder. My friend is a butcher and a very keen cook so he sorted it out for me.
  6. I’ve just joined this forum as I’ve bought myself a Kamado Joe Jr and I thought I’d share a few pictures of my recent cooks here in the UK. I did a Boston Butt - 9hour cook - Angus & Oink Porky White rub. Came out really well.

  9. Hi - Ive recently purchased a Kamado Joe Jr and how impressed am I!! Fairly new to all this but my results so far have been wonderful. Hopefully I can gain more insight and experience from this forum. Love all aspects of cooking - big curry fan AND Have been for many years cooking restaurant standard curries (well I do live in the UK!), now getting more into outdoor cooking, Ooni owner and now the Joe. Ive attached a couple of photos from my latest Joe cook..
