    My wife went to the grocery store a few weeks ago and they had top round on sale so she bought a few. The first one I seasoned and sous vide for 8 hours while we took my son to the circus. When I sliced it the meat was still fairly tough so I put it back in the Sous Vide for 8 more hours.  The meat was ok but still not quite as tender as I would have liked.  Yesterday I put a second piece in and went a full 24hrs. The beef was really good, it was tender and flavorful. I was suprised at the amount of meat juice in the bag to the point I was worried the meat would be tough and dry. It was anything but.. I saved the drippings and will use them for a beef stock. I only seasoned them with McCormick steak seasoning.

    I bought my kj from costco which is my favorite store. I know lots of people abuse the return policy but I can't ever bring myself to do something like that. I bought my vision from costco as well. If it wasn't for costco return policy I would not have taken a chance on the vision. That grill changed my life. Now I have 3 kamados and I'm an addict. I look forward to seeing the upgrades in the future.

    I love my anova. My wife much like your has really taken a liking to it. It's basically fool proof especially for lean proteins.

    I love my anova. It really does let you do some interesting cooking. The biggesxt thing I use mine for is roast beef. 24 hours and it's like butter.

    So let me just say 72 hours is indeed magic. These ribs were unbelievably tender but not mushy. I took then out of the water bath but couldn't finish then at the time do to some other plans. Today I put then back in the water  while I fired up my kj. I got her up to about 700. While she was heating up I removed the ribs from the bag and dried them. I threw then on for just a minute to two on each side. I didn't time it. They were outstanding.  Nice crust on the outside but medium rare and tender all the way through. These ribs were very tasty and just melted in your mouth like butter.

    I did not cut the pan. I did not use it as my heat deflector. I use it as a griddle. Excellent for smash burgers, home fries and lots of other good things.

    So I usually tell the cashier we can do this the easy way, the harder way or the difficult way. Either way I'm getting the amount I want,
    Easy = just ring it all up.
    Harder way = Just ring up the max amount, I'll pay and then just keep on doing it until what I have in my cart is Paid for.
    Difficult = I'll just keep going out to my truck and coming back in to get more until I satisfy my needs. [emoji12] [emoji1]

    I saw a post on planked philly cheese steak and had to give it a whirl... what's even better is we used leftover beef stock from the weekend to make our au jus on the grill.

    Not sure about the theme as I use the default but you should be able to set the text size in your browser. I either pinch zoom or set it in the setting menu.

    Sous vide steaks have become a favorite in this house. You just can't beat that perfect doneness with just a crusty outside.

    Ingredients:
    2 pork tenderloin 1 1/4 to 1 1/2 lbs each, cut into thick medallions

    Marinade:
    1/2 cup Vegetable oil
    4 cloves garlic minced
    2 lemon juiced
    2 tablespoon dried oregano
    2 tablespoon kosher salt

    Directions:

    Marinate the medallions for 6-8 hours. Skewer and grill.
     
    Notes:
     
    Serve with Tzatziki!
     
    I've substituted 1/4 cup of Dizzy Pig Mediterranean'ish for the oregano and salt with good results.

    I bought a teltru,  it's about 20 degrees lower than my maverick but stays 20 degrees off so I'm satisfied with it. 
    Just get something like this. You can find them cheaper on sale sometimes.

    I use only one most of the time.That said I'm very happy having not only having the ability to do 2 diffrent temps but also for the extra room. I sometimes cook for a week or two. Just recently I smoked two pork butts over the weekend and used the other one for grilling lunch and dinner at much higher temps.  Several times over the summer we have a large group of friends and family over so it's really nice to have the extra room.
