  1. I like your 'assistant.' My thoughts are with LA....we had Sandy years back.
  2. I thought SD was SoDak! Fine-looking bird there. You have me feeling motivated.
  3. Half a smoking is better than none, but.... ...alas, looks purdy but still can't produce a crispy, edible skin. And we did flour it. But the skin was rubbery and inedible. Apple and cherry for a while on the Weber, finished on gas. Served with dressing on the side. Waaah. The only way we have ever attained edible skin is whole vertical chicken on the gas.
  4. Lots of great info here. We like only moderate smoke on pig, and hardly any on bird. I always wanted to try coconut charcoal.
  5. Oh, and a slab of bacon smoked at the same time on the Kamander. Plus our own green beans and some mac 'n' cheese with added franks. Smoke was apple and a little cherry. Took three hours or so. We missed Q-ing lately.

  7. Unlike most other years, no guests. Just Smashburgers for the two of us. Hidden by cheese, bacon and condiments....
  8. *sigh* Starts out fun at first. Then you can start to feel like Everyone's Free Cafeteria. And they also want you to fix their computers for them.
  9. To tell the truth, I use tail-ends of different rubs dumped in a big empty shaker container, all mixed together. Hasn't failed us yet. (everything from Sucklebusters to McCormick's to lemon pepper to dollar store specials).

  11. ADM: Beautiful cook! I love how your peppers came out. (We actually grew 'those' can't-name-'em-here peppers. We had a worse name for them. The plant only yielded three scrawny seedy peppers.) Oooo...keeperofdeflame's olive dish!

  13. Mr. Ale uses his flame thrower. He loves it. I have no arguments against! Before that, he used these pre-packaged tumbleweed things.
  14. Apple is a delicate smoke. We use it exclusively for chicken and maybe sometimes pork, but for beef, I'm always hearing oak.
  15. Days late and dollars short, but we did baby backs in the Kamander. Came out fine!
  16. Cheap wire brush, but we replace them each season.
  17. Lucky to have reasonable birds! Today was the 'best' of the weekend, weather-wise. We did the Memorial Day cook early. I am now officially in a ribs stupor.
  18. I am not the OP (obviously!) but I'm learning a lot about Q-ing chicken overall, so thanks to everyone.
  19. This is the best we could do and it's not even close and not even on a kamado....
  20. Never successfully smoked a brisket (unless you count the Long Island Crutch, don't kill me), but what I hear over and over is, wait until it probes 'like buttah.'
  21. When we do Smashers on the grill grates, we smash them first. Seems to work.
