  1. One more question. Should I remove the lower charcoal grate if I am using a basket?
  2. I have been smoking meats forever, but doing on an electric smoker. Just got my first Kamado Joe. I got a charcoal basket and filled it up before cooking. I was smoking a brisket at 250 degrees for about 9 hours or so and the charcoal was done. Did I need to add more than that basket can fill. I think I did everything else right. Had the bottom vent open about an inch the top value open to the fire line marker. Its was steady eddy at 250 degrees. Need advice
