  1. my favorite cheese is actually some kind of smoked cheese that I had when visiting Hokkaido Japan. I actually have no idea what kind of cheese it was but I purchased it at a 7-11 there. It was just awesome pairing that with beer. I am not sure if anyone else here had that before. I've been trying to figure out what kind of cheese it was and try to re-created it at home.

  4. Hi all, I have recently acquired an used Vision Pro S and had smoked a pork butt and also a chuck roast. Like many posted before, I am having trouble keeping it low and slow. I found myself to have to close almost all the vents to keep the temperature at low 200s. I can never hit exactly 225 +/- 5 degree though. If I try to open the vents up to bump up the temp a bit, it will shoot pass 250 and always ended up in 300 to 350. I will try to do some sealing of the ash tray area to see if that will give me more control but also open to any suggestions.
  5. I thought about calibrating it but realize it's really not working after I taken it out. I've also attached the pic of the Tel Tru after it's installed. I verify that it's calibrated with boiling water.
  6. Hi all, I just recently acquired a Vision S series second hand. Upon taking it home and fire up for the first time, I realize that the thermometer is not working correctly. Since it's not working correctly, I figure I'll replace it with something new. Right now I have ordered a Tel-Tru LT225R, based on Amazon recommendation. I was wondering if there are others recommendation instead of Tel-Tru. Thank you. Jon
