    Have you read this? Not sure of the scientific reason but it works. The length of depends on the temp your running temp of meat when putting it on the grill the size of the meat A 4 pound brisket will be done before a 10 pounder will be. A big key to remember is the meat is in charge and will be done when it wants to be done. Take some note for the first several cooks to compare what worked and what didn't. Don't get too wrapped up in times each roast will be slightly different. Don't give up it will come Ribs are a good choice to start with there forgiving and cook some what quick 5-6 hours and will help you learn your grill. Good luck and keep us posted

    Hello.  Thank you for all the useful replies.  After several more cooks and throwing away some bitter burgers,  this evening I have success to report. I was inspired by keeprovdeflame so I purchased an Eggspander basket and a half-moon griddle to try to avoid smoke from drippings.  Though I really like using them, that setup alone Did not improve the flavor.  Enter Adm’s comment.  I think you you might be cooking too soon.  I have watched a few kamado grill cooking videos.  A couple of times in a row the cooker in the video, said.  I usually let the grill hold it’s temperature for about an hour before I put any food on it.  That was it.  I started the grill, let it get up to temp and left it alone for an hour.  Burgers were great, no bad taste of any kind.  On some forum I was on someone also said something helpful an profound.  They said don’t put food on the grill until you like the smell coming out the top of the grill.  Again thanks everyone for your help.

    Do you put a lot of seasoning on your burgers before grilling? One thing I quickly noticed when I switched to charcoal, high heat cooks was a lot of the spices I put on the burger burned during the cook, especially garlic powder and black pepper.  This resulted in a bitter, burnt taste on the burgers.  I now blend the spices with the meat prior to making the patties, and I have not had the issue since.  Just a different thought beyond which charcoal, temp etc.

    Burger meister is correct. I start my joe with 2 or 3 starter wait about 15  min add the deflectors and grates., sit back have a cold one or a couple of fingers of bourbon and wait for the grill to do its thing. Your just going through the learning process. Once you learn your grill it will become 2nd nature.

    I've been contemplating this myself.  When i do it, I'll be putting mine on the dome as there's less change of BBQ sauce or my grill brush damaging the gasket.  If you decide to do it, please update us and let us know how it went, especially with the Joetisserie.

    I have never spritzed anything in my life. 
     
    But I would have though that a balsamic and/or red wine vinegar type would work well for beef, whereas and apple cider type would work well for pork.

    Thanks, Y'all!  That's great feedback!  I got the most important feedback so far--my wife said, "go ahead, get it!"  So I pulled the trigger and it's coming at the end of next week.   I feel  like a kid at Christmas time!

    I bought mine in June because I was ready to take the next steps. I had used an electric smoker for years and had been wanting to learn fire management and temp control. I wasn't quite ready to pump a bunch of cash into a cooker style that I wasn't convinced was right for me and my use. I really thought I wanted an offset but couldn't quite come to grips with having to modify an offset that has a reputation for not being able to hold heat and leak heavily nor was I ready to jump into the $1100-$1500 range for something that I didn't know was right for me.
     
    I kind of was interested in the kamados but didn't know much about them. I'd briefly look at them when I was at the home improvement stores whenever I'd go in but it was more out of curiosity than anything. 
     
    One day I had been on the internet and saw at ad for the Akorn on sale. It was enough of a teaser for me to look further into it. The end result is that I an Akron now resides on my deck. 
     
    It does a lot for me, it grills, smokes, sears, is easy to clean, has been next to zero maintenance, it was cheap enough price wise for me to take a chance on it and my food does not know the difference of what it has been cooked on. The main thing is that is is doing exactly what I wanted it to. It is teaching me how to control the fire, manage the temps and is versatile enough that I get to experiment with all types of food/cooking styles that an offset does not offer. As time passes I'm sure I will want something much higher in quality but for now I'm enjoying the process.
     
    So far, my kamado experience has been very positive, at times frustrating but overall very enjoyable.
     
    Whichever cooker you go with, enjoy the experience. I for one am glad I chose going with a kamado style cooker.

    I am 7 years into my Akorn and while it would be nice to own a KJ,  this Kamado has served me well and provided many excellent products for my table.  I would seriously choose another for my next Kamado based on this and the price point.  Thats my two cents worth.

    I looked at locally available Kamados and was all set to buy a Primo.   For some reason the local store put me off and I backed away.  It was the dealer and not the grill.  Silly but there it is.
     
    Then thought I'd try an Akorn Junior to see if I liked the concept.   By the time it arrived I decided that the full sized Akorn was more realistic so didn't even open the Jr's box, returned it, and got the bigger Akorn with cart.
    Aside from major frustration in assembling the cart the rest went together easily.
     
    So far I have absolutely no reason to doubt that decision.   It works very well for what I do.  No complaints at all.
     
    As far as bang for the buck the biggest knock on Akorns seems to be that they may rust out in 5-7 years if exposed to rain etc.    Rain is not much of a consideration here but I still wheel it under the patio's roof when not in use.   Given the low price of the Akorn  I can replace mine 3 or more times for the cost of one of the ceramic brand names which may not last 20 years anyway [maybe neither will I?].  
    If I used it every day the big names might be better value but I doubt it.   And ~ Nobody I know is impressed with the brand name on the grill.

    A year or so back I was touting my KJ Classic and Jr. and about how much I used them with some folks at work. One guy jumped on a deal on one of the BJ's @ a Road Show. Now his freezer is packed with stuff that he..........well, actually his wife...cooks. She LOVES the thing and is always looking for something else to cook on it. He's been looking at a Jr for some smaller weeknight cooks.

    KJ might want to consider adding a blue cellophane wrap over the gaskets (similar to the wrap that protects Appliances from scratches in packaging) to prevent gasket damage in transport.  
     
    That would prevent fiction damage like this in transport.
