  2. We have been wanting to try this for a while and since we didn’t have plans to leave the house Saturday Agua Chile it is. Very simple to make. This was just 1 pound of shrimp peeled and devained and cooked in freshly squeezed lime juice in the fridge for at least 30 minutes. After about ten minutes you can see the shrimp start to turn pink from the acid of the lime. in a blender I blended the following 1/2 cucumber A good handful of fresh cilantro 1 garlic clove 4 to 6 Serrano peppers 1/4 cup of lime juice salt n pepper to taste after the shrimp have been sitting in lime juice 30 min add about 1 chopped cucumber no seeds and about 1/2 of red onion thinly sliced then add your mix from the blender and salt n pepper to taste and let sit for another ten minutes in the fridge. When you serve it you can sprinkle some Tajin on it then enjoy with some tostadas or saltine crackers And a cold beer. I like spreading mayonnaise on the tostadas and put some Agua Chile on it. I know this dish is not for everyone but don’t knock it until you try it.

  9. So I had a few guests over for New Years Eve and decided to break out the Matador and make one of my all time favorite dishes Shrimp Scampi. It’s a fast and easy cook and very delicious. Everyone enjoyed it and I got some good compliments that made my day!!! Take a Look

  11. So I just had to add this Matador to my arsenal and right away after the initial seasoning I jumped right in and cooked a discada. A discada is a variety of meats cooked with peppers, tomatoes, onions, garlic, beer, and other ingredients and seasonings. They are always a hit at parties and gatherings and make for good tacos. You can make tacos and serve or just gather around and grab a tortilla and help yourself straight from the Matador. Here’s a few pic of a couple of discadas and a 2 meat chili that I made with left over pulled pork. Thanks for looking!!!

  13. Thanks everyone for the compliments!!! Means a lot coming from all the great cooks on here. For those of you that are expecting a Traeger soon congrats!!! I think you will be very satisfied just like me. For those on the edge about buying one you won’t be disappointed. I think what I like about my 1300 is that my wife always felt intimidated by all my grills and now she is cooking on my biggest grill and loves it. She gets home before me during the week and is able to start the Traeger up with a push of a button and get dinner started by the time I get home:)

  16. Hey gurus I know I’ve been gone a while and yes it’s the same ol song and dance with me being busy all the time. But I always have time to cook:) and here lately I’ve added a few cookers to my arsenal. I added a Traeger Timberline 1300 pellet cooker and a Rectec Matador but I will post on the Matador later. here are some pics of some of my Traeger cooks. Thanks for looking!!
  17. Congrats on the timberline!!! It’s a heck of a cooker. I have the 1300 and I am really having a blast cooking on it. I’ve been using pitboss and Traeger pellets and they both are great.
  18. They are definitely still recovering but there is still a lot of places that are open and the tourists still keep on coming and that’s a good thing.
  19. After some ups and downs we decided on taking off to the coast to relax and spend time with the family. So we loaded up the KJ junior and everything we need to hang out at the beach. I didn’t take to many pictures but we had lots to eat. To drink we had beer and lots of it and we also had Mimosas and wine coolers. To eat we started out with some fresh mixed fruit cups topped with freshly squeezed lime and a heavy sprinkle of Tajin. Later for lunch we had shrimp tacos topped with fresh pico de Gallo and a chipotle cream sauce on corn tortillas. And for dinner later we kept it simple and just grilled some skirt steak and had more tacos. We had lots of fun and spent some quality time. Already looking forward to Port Aransas 2019.
