  1. I have been very happy with two paper towels rolled right on an angle bias of the sheet, a few drops of cooking oil and I always have these in hand. Starts the fire just as good at the fire starters and no need to buy anything special.

My wife hates coffee but loves this rub on steaks and always asks for more when we run out: 0.5 cup sugar in the raw 0.5 cup kosher salt 3 TBS chilli powder 3 TBS smoked paprika 1 TBS of red pepper flakes 1 tsp garlic powder 1 tsp onion powder 1 tsp coarse black pepper 1 tsp Expresso 1/4 tsp of cayenne Allow it to meld for a day or two before using.   5. For seasoning we use 1 cup of sugar, 1 tsp of sea salt and 7 TBS of rice wine vinegar. Heat on the stove until sugar is combined and then fold into the rice, cool rice by fanning it as folding , you will have some great sticky flavorful rice. Sent from my Nexus 6 using Tapatalk
  6. Make sure and get short grain rice. Add the amount of rice you want to the pot, and add enough to water to be about an inch over the rice. Bring to a boil, lower heat to low simmer. Simmer for 15 min with cover on. At 15 min turn off the heat and leave the rice covered for 15 more mins.   7. Used a Brown sugar and pepper drive rub and finished with some hickory bourbon bbq sauce.
  8. I just got a bag of bayou classic lump Charcoal, 18lbs for 14 and I really like it minimal ash, nice size pieces and little to no ash, and it smells and imparts nice taste to the food
  9. I really like the setup, what did you use? Are those just stainless pans? @RedJoeThey are just X-large SS dog bowls I got from Tractor Supply Company. How did you get the dryer vent into the top bowl?

  11. The yogurt definitely helped get the spices into the chicken, I have used the recipe before and this time it really came through on flavor
  12. After seeing several posts on using yogurt to get the proper color and taste for chicken masala, I decided to try my version of Mediterranean Chicken with a yogurt base. The family really enjoyed it, I didn't even get to take a plated picture as I served it with broccoli and Mediterranean rice. Mediterranean Chicken recipe 1 cup plain yogurt 4 tablespoons lemon juice 1 tablespoon lime juice 4 cloves of crushed garlic 2.5 teaspoons ground cumin 1 teaspoon red pepper flakes 1 teaspoon black pepper 1 teaspoon salt 1 spatchcocked chicken Mix all ingredients in a bag and add chicken. Refrigerate for 2hrs or more. Remove chicken and place on egg set up for indirect cooking. Cook at 250 until chicken reaches 165 and let sit for 20 mins before carving.
