I can't speak to the sous-vide part of this, but if you try sprinkling your wings with a little baking powder (which is a sodium compound, so reduce your salt), you can get AMAZINGLY crispy, BEAUTIFULLY golden skin.   5. I love pizza. And I love to cook pizza for friends. So this month's challenge was the perfect excuse to make some pies and have some friends over to eat em! First up, let's season up some chicken and let it sit in the fridge for several hours. While that chicken is getting all flavorful, sauté some garlic and red onion in butter. Then add some of this stuff: And then a little white wine: And let it all simmer over low heat for a while. Once those stewed tomatoes are soft, mash em with your potato masher!   18. I personally like the fresh mozzarella (which comes packed in water), and blocks of whatever other cheese (mainly cheddar) that I'm combining with the mozzarella. It's definitely a pain to shred the cheddar, and even worse to dice the moist mozzarella. That's why I have my daughter do it. She considers it a small price to pay for Daddy's homemade pizza off the Joe.

  21. Debuted this to the family as Valentine's Day dessert. It was a definite hit! And most importantly, it put a smile on the missus' face, and that special twinkle in her eye!
