  1. So I've got a shot of how the screws look mounted in the hole (cutouts). The whole thing works well but I goofed. The screws will seriously scratch the finish on the cooker. I got lazy and tired and didn't do what I intended to do which was place green egg felt on the heads of the screws to prevent scratching. I'll do it sooner or later.

  4. Man I'd like to get ya a pic of how I have them braced but I'd have to take one out and then I'd pay he'll getting it level again.
  5. As a matter of fact I'll be cooking on both tomorrow.
  6. Here's how I do it. In fact, I did wings last night.. I like mine naked, lightly seasoned before going on the grill. I always keep the wing intact sans flipper. Indirect heat, using upper and lower grill grates. Two to three medium to small chunks of oak, wrapped in foil. And then roasted, lid closed of course for 45 minutes to an hour at 350 to 400 degrees. Make sure the skin feels tight to the touch and not rubbery before pulling them off . Ideally you'll have the perfect combination of firm skin and magnificent juiciness. I use oak for fast cooking and it is fantastic on wings. Next time I'll post a pic.
  7. Anybody smoking with peach?? If so, how are you using it and how much?? Do you have to use more in one cook than say oak or pecan?? These are the woods I normally use. Oak for fast cooks, pecan for long cooks.
  8. Thanks..I've got six stainless steel screws per hole placed around the inside of the cut outs.. This braces and supports the grills and gives about half an inch separation between the grill and the wood..

  10. Yeah it is my first.. Believe me, it's got it's problems but all in all I'm really pleased with it..
