  9. I've had my eye on a PBC for quite a while, looks delicious!
  10. Did that recipe a few weeks ago and was a hit. Didn't last long at all
  11. I've used Royal Oaks and the Primo brand before the Costco in Moncton, New-Brunswick started carrying Basques. Since then that's all I've used, I usually stockpile it before the winter so I'm good until spring. At 12.99 a bag you can't go wrong, the sizes are mixed like it's been said but I usually try to use that to my advantage. I never had any issues maintaining temp or anything. I'm thinking of trying the quebracho but having a hard time justifying more lump, lol. I've been having great luck and delicious food with Basques for the last 3 years anyway.

  13. I've only seen it done with bacon once but here a lot of restaurants and people still make it and it's always been with lard as the meat and as extra fat. Still haven't found one better then my grand mothers though
