    Spartchcocked a a 5lb chicken today. Brined with salt, water, meat church’s the gospel and minced garlic for about 6 hrs, then patted it dry and hit it with their season all and a little more garlic. Finished by brushing with Stubbs bbq sauce. Turned out great!

    Never used an electric starter, but with a starter cube light one in the center for low and slow, and bring to temp slowly. Kind of like the old saying “aim small, miss small” when shooting for low temps! Also, have fun, and don’t sweat a “magic number” let it settle anywhere between 220-265ish and      Let it ride!

    Started this one out by smoking a whole bird @~235 , pulled it off and pulled it, and added it back to the chili in the Dutch oven, also made a unique avocado and tomatillo  crèma. It was really, really tasty!

    Ha funny thing about that picture is there’s nothing cooking on the grill when i took it . The chicken was resting and I hadn’t started on the actual chili yet lol

    Looks spectacular!!!!  Avocado crema looks good and I know @Smoke and Awe is famous for doing one of those as well.  
     
    And of all the precarious places I have perched a beer over the years... well, I don't think I've ever done a kamado handle balance.... Nicely done!

    I cross hatched the meat side of this but down about a half - 3/4 of an inch then added the rub (honey hog and red pepper flakes)
     
    couldnt really tell tell a difference but, if you don’t try, how will you know? Ha!

    Maybe? Not much for sure, also part of the   “Experiment” was to give it a few spritz throughout the cook (not something I normally bother doing.)  it was still pretty moist though.

    I thought I'd give this a try tonight and it turned out pretty good.  I was a little nervous but I couldn't have been happier with the results.  I used a brine mixture from this site and made a minor change and then used a local pork rub.   I finished it off by applying 2 coats of rib candy during the last 30 minutes.  The meat was extremely juicy and tender.  Anyway, here's the end result.

    As much as I enjoy doing fancy/different cooks, at the end of the day, a good burger with plain ‘ol Tater chips is hard to beat.

    After the new Red Kettle had burned for approximately 90 minutes initiated it with a fast cheese burger cook.

    Let the patties heat up indirect at first.



    Once they were sweating I moved them over for a 90 second sear on each side




     


    and then move back to the indirect side to melt the cheese.



    Plated mine up with some chips, potato salad and a Stone Brewery Coffee Milk Stout.




     



     


    Easter was good to me.

    really... never... oh my.. it's wonderful.  I make it once a year around Thanksgiving.  Only once a year as my heart doctor would object otherwise.

    Looks great.   I so love doing breakfast on my grill.  I actually had my welding shop cut  1/2" thick stainless steel rings, which work great for pouring the eggs into.  Makes a perfect size egg "patty" to put on the buns.
