    I agree with it having a leak. Light that sucker up and throw some smoking wood on and let it get to smoking really well then close her up as tight as you can. If there is a leak it will become apparent in a minute or so.

    I do like to eat Pompano and usually catch a lot of them but this is my favorite for eating. If you have not had grilled Cobia (Ling) you have no idea what you are missing. I caught this one Wednesday.

    Actually I have two Akorns that have not been modded in any way and do not need to be. They came just fine out of the box and have been trouble free. I think a lot of folks are busy fixing a problem that does not exist because they have read OLD posts saying it does. Akorn fixed the problem several years ago.

    The first mistake you listed is not a mistake at all.  Whatever temperature you choose is not an issue.  I personally like to cook turkey at 400f.  
     
    I agree that the mistake was you not listening to your thermometers.   I am used to seeing people spend hundreds of dollars on electronics for cooking bbq.  What I'm not used to seeing is what they tell you being overridden by a 'hunch'

    Back when they were trying to extort $$$ fro me and sending me threatening emails daily I saw and downloaded the "Photobucket fix for Chrome". I was instantly back into my photobucket account and stopped getting the emails, etc. As of today I still have all my pics and videos on PB.

    The only difference between a low and slow at 225 and 300 is the amount of time for the cook. Taste wise you will not find any difference other than maybe a tad darker/crispier bark. Thus if you are cooking at 225 and it is fluctuating between 225 and say 280 do not worry about it at all. Just pull your cook when your internal temps hit your target point.

    I use the TTT (Tip Top Temp) and it has never failed to work perfectly after almost 5 years of service, I just set it and walk away.

    One day you will learn, all that is really not needed. You're poo pooin me now but one day you'll think back to this thread and know I was right. I was a new kamado user once and tried all these mystical tricks. 
     
    Put some chunks in the very bottom. Fill the lump basket/bowl full. Dig a hole in the middle down to the grate. Light the lump in that hole. Any method will work (cubes, cotton balls, Mapp torch etc...). Let it get going for a couple of minutes with the dome open. Set your vents, close the dome and give it an hour or so to stabilize. 
     
    Don't forget this post, you'll thank me one day.
