  1. I’ve made this pizza at least 10 times as it is my favorite. This morning I made up some pizza dough. Around 3:00 I prepped my kamado for pizza and lite it up to preheat. Around 3:30 I brought out my dough and all my ingredients. I applied a thin layer of BBQ sauce and some red onion. Then some red bell pepper and cilantro. Then some chicken breast I’d mixed up with some BBQ sauce and finally, the cheese. Placed it on the pizza stone in the kamado for approximately 8 minutes at 400 degrees. Here’s the result.   2. So I needed to get my pizza cook in before the end of the month so I broke out my favorite, BBQ Chicken Pizza. This morning I got a couple chicken breasts out to thaw and made up some pizza dough. This afternoon I broke it out and cut it in two. I rolled out the first half and placed it on some parchment paper to start building my pizza. Spread out some BBQ sauce, some red onion and then some red bell pepper. I had cooked up the 2 breasts. I sliced them and sauced them and then placed them on the pizza. Next up was some cilantro and the cheese. It went on the preheated (to 525) pizza stone for 8 minutes. Here it is done.   3. Remember I had 2 thighs leftover from this cook? http://www.kamadoguru.com/topic/26165-grilled-chicken/ Well today around 12:00 I made up some pizza dough. Around 5:00 I got a chimney of lump going on my side burner. I poured it into my kamado and set it up for a pizza cook. While it was coming up to temp I went in and prepared my toppings. (Husker wanted some chicken!) The dough had easily doubled in size. I divided the dough and rolled out 1 half. (My wife wanted me to cut it into a perfect circle so I did) I place on all the toppings. This is when I had to improvise. Some of you know that I’m getting my home redone. Well I went to go get my pizza peel and it wasn’t there. We looked all over and couldn’t find where we had packed it so I had to make do with what I could find. Here’s how we did it. I took my 2 largest spatulas and slowly worked the pizza onto the bottom of a platter with parchment paper. I took this out to the kamado and use it as the peel. Kamado was up to 600 degrees so I cooked for only 6 minutes. Here’s the first one. And here is the second one. With perfect crispy crust. Delicious. Thanks for looking.
  4. I’ve made and posted this many time so this is more of just showing you what we had for dinner last night. (We had guests so the pictures aren’t great) Start out by dividing my dough. Then assemble my pizza. Now on my pre-heated (to 550) kamado. And done. Second pizza.
  5. Momma wanted pizza so she got pizza. BBQ chicken pizza is one of her favorites and I had all the ingredients. Yeah! Made up some dough and let if proof for 8 hours. Got all my ingredients together all took them out to my work area on my gas grill. Rolled out the 1st pizza and placed it on some parchment paper. Sauced. Placed on the onion, red bell pepper, cilantro, chicken, and mozzarella cheese. On to my pre-heated (to 550) kamado for 6 to 7 minutes. As the song says “I’ve got the fire down below!” All done and cut. And second pizza. Yum!
  6. I start out mixing up some dough. (This here is philpom’s recipe) Slice up some Chicken Tenders, some Red Onion, Red Bell Pepper and grate some Mozzarella cheese. Pre-Heat the kamado to 500 degrees. (Let it stay at 500 for 10 to 15 minutes so as the heat soak the stone) Roll out the dough and spread on some BBQ sauce on. (Approx. ½ cup) Then the Red Onion, Red Bell Peppers, Chicken and Sun Dried Tomato’s. (S.D. Tomatos are optional) Cover that with Mozzarella And then on the pizza stone for 8 minutes. (I've taken to using parchment paper so not to get cheese all over my stone ) Finished Product.
