  1. It’s been hot this last week here in Low Cal (Upper 90’s to low 100’s) but today it cooled off, so I grilled a few Cheeseburgers. I started out by cutting 2 russet potatoes up into 1/8th and then tossed in some OO and seasoned with some fresh ground salt, black pepper, cayenne pepper and some thyme. I then seasoned the patties with Primo Chicago Stockyard rub. Here they are on the grill ready to be flipped. Flipped them. I then removed the patties and toasted the buns. While they were toasting I added some cheddar cheese slices to the patties. Once the buns were done I put the patties back on to melt the cheese. Here it is plated up with the Steak Fries and a Modelo Especial. YUM! Thanks for looking.
  2. Sent the long weekend off in style with a Double Meat Double Cheese Burger. Fired up Jr. for the patties. Flipped and removed them when they were done so I could add the cheese. Toasted the buns. One more time of the grill to melt the cheese. Plated this up with some watermelon, potato salad and a Stone Brewing Xocoveza. (Yum!) After a few bites of this monster. So good!   3. When shopping and got some groceries we needed. Picked up some nice brioche buns and we made cheeseburgers on the Akorn Jr. again. Sliced up the veggies. Cooked up the burgers. Assembled my cheeseburger and plated it with a slice of water melon, some pringles and a Modern Times Blazing World Hoppy Dank Amber. Delicious. Thanks for looking
  4. Yesterday I inched closer to retirement as I had my 61st birthday. In the morning my wife blessed me with some nice gifts. She said these were all to help me enjoy the outdoors more. (Not sure I needed more things to do that but ) First thing she had me open is this Landman fire pit. Next thing I open was a cover for the firepit. Next thing I open was a nice insulated shoulder bag. And finally, I opened the last gift which was and assortment of frisbees for Frisbee (Disc) Golf. As a youth we used to play Frisbee Golf a lot at La Mirada Regional Park. She thought I might enjoy getting out and doing this again. The rest of the day we spent it at home doing a few redecorating chores that we had been meaning to get to and generally taking it easy and enjoying ourselves. Towards dinner time I fired up the Akorn Jr. and made us some cheeseburgers. Here’s my burger with a slice of watermelon, some Pringles and a Stone Ruination Double IPA. A very relaxing day that I thoroughly enjoyed. Thanks for looking.
  5. It's still July and having already made some nice Cheeseburgers yesterday, I decided to try something a little more outside the box. There is a Burger restaurant near us called Slaters 50/50 that serves a burger called the Buffalo Buffalo Burger. Here’s a description: “The tangy stack features seasoned ground bison (aka the American buffalo) nestled on a bed of shredded celery and carrots. All that's topped buffalo sauce-infused sharp cheddar cheese, grilled onions and jalepeños, and then smothered with housemade buttermilk ranch and Frank's RedHot dressing” I decided to try to recreate it here. First I bought some ground Bison meat at Costco. I mixed in some onion and some blue-cheese into the meat. To speed things along I placed a chimney of charcoal on my side burner. Once the charcoal was ready I poured it into the charcoal baskets in my Weber OTS. I placed my Camp Chef griddle over the coals and waited for it to get screaming hot. I then place 4 meat balls on. They started sizzling in no time. I smashed them and then flipped them. While they were cooking I made up some Crystal Hot Sauce Mayo. When they were done I assembled my burger. First was the Crystal Mayo on bot top and bottom haves of the bun. Then some thinly sliced carrot and celery. Next the burger, 2 slices of sharp cheddar cheese and some thinly sliced jalapeno. And finally some pickled red onion. Here it is plated up with a slice of watermelon and a Ballast Point Grapefruit Sculpin IPA. The crunch of the carrot and celery going with the heat of the mayo and jalapeno with the savory buffalo meat and cheese and the sour of the pickled onion. Mmmm! Best burger ever! Thanks for looking.
  6. It’s still July so I tried a new burger this evening. “The Crunchy Guacamole Cheeseburger” I had a leftover Buffalo patty and some buns from the Buffalo Buffalo Cheeseburger cook on Sunday. I spread on some Crystal mayo and then placed on some thinly sliced carrot and celery. (The Crunch) I liked it so much from the Buffalo Buffalo Cheeseburger that I wanted it again. I then placed on the buffalo patty with 2 slices of sharp cheddar cheese. Then a heaping tablespoon of fresh made guacamole. Place on the lid and took it outside to take a plated pic. Yum!   7. This is my very first entry for a Kamado Challenge, and also my first pizza attempted on the Akorn. Sorry if I'm missing a step or some pictures. I actually don't have any pictures of the pizza on the grill because it was so hot. You'll see that my concerns were valid with my first attempt... All of my ingredients, minus the dough that was in the fridge Browning my ground beef Chopped up the peppers and onion Pulled my dough out into what was almost a circle Added my mustard base Topped it with my ground beef I then added pepper jack cheese and green bell pepper A little more pepper jack then orange bell pepper Sprinkled a little cheddar jack on there Added my onions, poblano, and jalapenos with a little extra cheddar And after the dough warmed up and stuck to the parchment paper and four hands lifted and ever so gently keep dusting corn meal under it to finally get it off, I threw it onto a SCORCHING (around 650) pizza steel in the Akorn on the elevated stand, and around 4 and a half minutes later I was quite shocked... Luckily, I had another dough and enough ingredients to quickly make another one the exact same way, but on a slightly cooler (615ish) grill for 3 and a half minutes, and got a great result! Companied with a Leffe Blonde Belgian Abbey Ale. It was a lot of fun doing this, and I apologize for not having any actual grill shots, but this was VERY time sensitive. As this is my first challenge, I'll accept constructive criticism on the post, but don't you dare criticize that second pizza!
