  1. My daughter grabbed up some fresh, wild Sockeye filets at Costco a few weeks ago. She dropped them into our freezer since she didn't have room in hers. Yesterday, she asked us to pull two out to defrost for a dinner. They were just around a pound each. They sat in the sink for three hours at which point she called and advised that she cancelled dinner due to a sudden stomach ailment. We put them into the fridge then decided today that we should cook them up to prevent spoilage. This afternoon, I made a brown sugar and kosher salt brine and soaked the fillets for just under two hours. i fired up the Akorn to about 169 degrees, added some apple chunks and alder chips to supplement and then tossed the fish on. They have been in the Akorn for about an hour now and I think I am going to go for about three more hours before pulling them off. The Akorn has been holding steady now at 168-170 degrees F and that has surprised me. I seriously thought that I couldn't get it to hold that low. First time doing fish on the Akorn At a temperature this low, so any suggestions are appreciated! More photos to follow as we finish up.
  2. Anyone cold brew coffee? I am just starting out, my first real attempt was last night, and I had some amazing mellow and flavorful coffee today. Last night I corsely ground freshly roasted coffee. Mixed coffee (50 g) with approximately ice water (~14oz). Let this sit overnight at ambient temp. Next morning filter... Dilute 1:2 - 1:4 concentrate : hot water. This might be easier and better than my areopress. This is my bonvita steep/filter device. It is a ceramic version of a clever coffee dripper. This could be done in a French press.


    So the girlfriend and I went down to the big city this past weekend for an Eric Church concert (story in itself) hit the concert, hit the bars friday night, saturday went to the casino.. Sure as heck, Sunday night, sore throat, starting to get a stuffy nose, sneezing... Wake up Mon morning to go duck hunting, throat on fire, stuffed up.. In college I always survived cold season by taking zicam, C and Echinacea.. Roommates and everyone around me sick and I would start to feel it, take the above and not catch a cold or have minor symptoms for a few days while there were snuggled in bed for a week.. So on Monday I did not want to run into town so I ran to the dollar general looking for Zicam.. All they had was there brand in some quick release tablet "compare to Zicam"... Start pumping them as directed.. Girlfriends calls, mad, "I have a sore throat" so she starts pumping them.. Woke up Tuesday morning feeling fine.. Sure I still have a sniffle here or there and cough once in a while, but feel fine.. I am usually not into that homeopathic hocus pocus crap but I truly believe in this stuff if used at first symptoms.. I know they had to change their recipe a few years back because it was making people lose there sense of smell.. Was skeptical of new formula but I actually think I thwarted the cold.. Anyone else use it..
  4. I'm wanting to do a brisket via overnight cook, but temps here will get down to 15 degrees. Just seeing if anyone had any experience doing a low and slow cook in cold weather. It might be insulated enough that it doesn't matter. Mainly just wondering if it is going to be able to hold temp.
  5. Hello all, I am considering the purchase of an Akorn but am wondering how late into the season I can go with this grill? I live in Quebec City, Quebec Canada which is definitely one of the coldest cities in North America. Any advice is very welcomed.
