We have no plans for this rainy Labor Day, which is great because my September schedule is otherwise packed. So I figured why not get a little sparerib practice in... I combined cajun- and honey-based store-bought rubs with some extra ginger, cumin, cinnamon, and nutmeg. Decided not to trim them this time. Brought the smoker up slowly using the Auber. I'm suspending a drip pan under the grate without a diffuser grate so I can more easily drop in some more smoking wood later on. Cables are the perfect length to reach the Auber in the kitchen, which is holding strong at 225°. I plan to go about 5-6 hours, no foil.
