  1. It's still July and having already made some nice Cheeseburgers yesterday, I decided to try something a little more outside the box. There is a Burger restaurant near us called Slaters 50/50 that serves a burger called the Buffalo Buffalo Burger. Here’s a description: “The tangy stack features seasoned ground bison (aka the American buffalo) nestled on a bed of shredded celery and carrots. All that's topped buffalo sauce-infused sharp cheddar cheese, grilled onions and jalepeños, and then smothered with housemade buttermilk ranch and Frank's RedHot dressing” I decided to try to recreate it here. First I bought some ground Bison meat at Costco. I mixed in some onion and some blue-cheese into the meat. To speed things along I placed a chimney of charcoal on my side burner. Once the charcoal was ready I poured it into the charcoal baskets in my Weber OTS. I placed my Camp Chef griddle over the coals and waited for it to get screaming hot. I then place 4 meat balls on. They started sizzling in no time. I smashed them and then flipped them. While they were cooking I made up some Crystal Hot Sauce Mayo. When they were done I assembled my burger. First was the Crystal Mayo on bot top and bottom haves of the bun. Then some thinly sliced carrot and celery. Next the burger, 2 slices of sharp cheddar cheese and some thinly sliced jalapeno. And finally some pickled red onion. Here it is plated up with a slice of watermelon and a Ballast Point Grapefruit Sculpin IPA. The crunch of the carrot and celery going with the heat of the mayo and jalapeno with the savory buffalo meat and cheese and the sour of the pickled onion. Mmmm! Best burger ever! Thanks for looking.
  2. Here's an update and revision on an old favorite of mine! Kamado Joe Smoked Buffalo Mac & Cheese Ingredients: 2 1/2 cups uncooked macaroni noodles (cooked to package instructions) 1/2 stick (4 tablespoons) salted butter 1 1/4 cup milk 2 eggs, beaten 1/4 cup Frank's Red Hot sauce 1 tablespoon dried minced onion 1/2 tsp granulated garlic 2 cups shredded cheddar cheese (more for topping) Barbecue Rub for topping Plain Panko Bread Crumbs for topping Preheat your grill for indirect cooking to 375°F. Cook macaroni noodles per package instructions and drain. Return to stock pot. Add the butter, milk, eggs, hot sauce, minced onions, granulated garlic and 2 cups of shredded cheddar cheese and mix completely. Transfer to baking dish. Sprinkle additional shredded cheddar cheese to cover the top of the macaroni. Sprinkle on some of your favorite barbecue rub. Cover the top with plain panko bread crumbs. Cook on the grill for 45-55 minutes or until sufficiently browned on top. Cool for a few minutes and serve HOT!
  3. Hello fellow KG forum members! Since the playoffs were going to be on and my wife and daughter were out shopping, my dog and I had the house all to ourselves. I began to think about dinner and I felt like making something appropriate for the NFL event. Well, what goes better with football than chicken wings, right? I asked my dog her opinion and she agreed, so off we went to the kitchen to get things started. In order to do something a bit out of the ordinary, I thought about injecting the wings, so I mixed up some ingredients to make a bowl of buffalo wing sauce. After, I dried them up with paper towels and sprinkled them with skin crisping powder before putting them into the refrigerator for a few hours to dry up. While they sat in the fridge, I decided to leave half of the wings as is and prepare the other half a different way. Again, thinking outside the box, I went ahead and made a garlic parmesan sauce. As you can see, I went extra heavy on the fresh garlic because I LOVE GARLIC! Here they are - half crispy buffalo inside chicken wings and half crispy garlic parmesan outside/buffalo inside chicken wings. The timing was perfect, too, because my wife and daughter walked into the house just as I was pulling the wings off of the grill. As for my dog, she got some extra dog treats. What she really wanted, though, was one of the buffalo wings, but I don't think she would've liked me much after if I had given her one. Thank you for looking and enjoy the pics!
  4. Yesterday we enjoyed a great day at the roller rink for our son's 6th birthday. We rented the rink for a few hours and my wife put together a Ninja Turtles themed party complete with Pizza, grab bags, and cake. Everyone who came had the opportunity to skate, eat good food, and have a great time. About 35 people showed up and it was a great day. I managed to get enough sleep Saturday morning to not be wore out for the party and even had the chance to throw together a platter of wings for the meal. I made a 60 pcs platter that included Frank's Buffalo wings, Red Hot Honey BBQ wings, and of course my Big Kahuna wings; all topped off with some rum and brown sugar glazed grilled pineapples. This platter got DESTROYED and all that was left was the lettuce garnish. All in all, a great party. 425° indirect for a cripy, grilled skin Frank's Red Hot Honey BBQ wings The full Nelson
