We made a massive sale run two weekends ago and I picked up 3 flat iron steaks, had one for dinner this Sunday. It was a simple and direct affair, salt and pepper on the steak and a hot Primo - 400f . Here's where we started: I used a multi-flip method, here it is at about 110f internal temp. Here we are ready to pull it, I think I read low 130's f here: And all slice up. I think you can even tell from the pic how tinder it was. Good stuff! For the 'fixin's' I used a wok with a little oil in it and tossed in a mess of French green beans, a bunch of cherubs I cut in half along with some rosemary, garlic powder, salt and pepper. I just cooked it until the beans were soft but still a little firm and the juice from the cherubs thickened to slightly coat the green beans: Man this was good for us! This seems like a perfect combination of foods it was truly delish.

I was looking for an idea this weekend. Thanks to @GrillingMontana , he came up serving suggestion, Pinwheel steaks. I went out and picked up a Flat Iron steak. First the steak was trimmed and cut into strips. The strips were marinated in some #JackDaniels smoky chipotle sauce for about 4 hours. The marinated strips were topped with spinach, parmesan and blue cheese and topped with slivers of almonds. The strips were rolled up and secured with skewers. They were then hot-smoked over some #JackDaniels oak barrel chunks at about 300 degrees. The temperature was raised to 350 for the finishing few minutes. The pinwheels were sliced and plated (note the bright red smoke ring). Steamed vegetables were served with the medallions of meat. Next time, I need to make more.

Hello all! After lots and lots of research, decided on a Kamado Joe Classic and just finished my first cook. Loved it! In the process managed to replace an electric smoker, a gas grill and a camp stove. Patio seems so, so much bigger. For first cook decided on an old stand by of flat iron steaks with a fajita marinade. Would post more, but time for seconds. It was so moist an awesome......
