  1. I have made a lot of rounds of French Fries trying to come up with the taste and texture that I enjoy. This technique is closer than anything else I have ever tried. Ingredients: 2 big ole taters salt, seasonings to taste Directions: Cut the potatoes into 1/4" to 3/8" wide strips. Wash them thoroughly with cold water and soak them in a cold water bath for at least 5 minutes. Drain and dry as much as possible. Put them in 275 degree oil for about three minutes. Remove from the oil, drain on paper towels and let sit for 20-25 minutes to cool to room temp. Place the fries in an air tight container and put them in the fridge for at least 90 minutes and for as long as four days. When you are ready to cook the fries, preheat your oil to 375 degrees and put the fries in for 7 to 9 minutes or until they have a consistency and color you like. Drain and serve hot!
