bigldevil20
I made some really good stuffed chicken breasts. The stuffing is sauteed mushrooms, sauteed spinach, bacon crumbles, and freshly grated swiss. These were cooked direct on grill grates at 450 degrees. Let me know what you think. TrueBlueEagle
Beautiful! Any tricks on keeping the chicken together? I noticed you didnt use butcher string to tie it up and didnt seem to have any trouble from stuffing coming out or it falling apart.
Improv
Looks like they used the "pouch" method. Stick a paring knife directly in the middle of the fat end of the breast and cut to the edges, careful not to poke through entirely and leaving a half inch margin on all sides. I use this method when making chicken courdon bleu... you can just roll up ham and cheese slices and stuff it in there. bigldevil20

bigldevil20
Just as improv said I used the pouch method. It worked a lot better than the last time I tried this and sliced open the side like butterfly. Here is a video that helped a lot.
Improv
Ok, I know what's for dinner tonight now. Thanks. bigldevil20
Smoke and Awe
Yes, very inspirational; however, I think I will make a pan sauce with the stuffing mixture instead of put it inside the chicken. I'll top the chicken with the cheese and then pour the sauce over. Yes, that's what I'll do. Thanks for the post. Smokehowze
So you really what to know what I think? Well... I think you forgot my invitation to dinner. Great meal. Love the stuffing in the chicken.

I just pouched my breasts and started brining them with tomato paste again (that turned out really well the other day) hoping that flavor gets inside. I'm also going to have the spinach on the side and save the pocket strictly for cheese. Wrapping the whole thing in bacon. bigldevil20
Smoke and Awe
Dave, thanks for these ideas to improve on my idea. Will do! Did you do a thread on your chicken? Sorry if I don't remember.
