bjunge Posted August 22, 2014 Share Posted August 22, 2014 Took the plunge and did a meatloaf last night; gotta say, turned out pretty damn good. 1 ¼ lbs. ground beef (round) ¾ lbs. ground pork 2 eggs 3 tablespoons heavy cream 1-2 tablespoons Chipotle Tabasco sauce 1 tablespoon Worcestershire sauce 3 tablespoons of horseradish (I used raw) 3 tablespoons minced onion (I used dry, but would've preferred fresh) 1 tablespoon hickory smoked salt 1 teaspoon each kosher salt and fresh ground black pepper Handful or so of your favorite smoking rub on top.. On a 400 degree grill (couple of applewood chunks), with diffuser and drip pan (and potatoes) for about 30 minutes... Mixed up some Stubbs Sweet Heat, 1/4 cup brown sugar and about a tablespoon of yellow mustard and coated the top for the last 15 minutes. Pulled it at 160 internal temp, tented with foil while the potatoes finished. Sliced her up and it was DELICIOUS. Kudos to everyone for the tips, as always! Admittedly, I borrowed the idea from their site, looking for a simple meatloaf recipe... didn't want to over-inundate the meat with the usual oven-variety spices, etc so I could get the true smoke/grilled flavor. afidel Posted August 22, 2014 Share Posted August 22, 2014 Meatloaf has probably become my most frequently done item in the kamado because it's fast enough to do on a weeknight (I work till 6PM, have at least a 30 minute commute home and try to have the kids in bed by 9) but really does a good job of taking on the smoke flavor. On the Onion, I buy the frozen onions as I hate chopping onions and use them fairly sparingly so end up throwing out 2/3rds of them most of the time. I think I still have a raw, prepared meatloaf mix vac-sealed in the freezer.
