wilpark Posted January 6, 2017 Share Posted January 6, 2017 Simple Rub 58% black pepper, 38% salt 2% sugar and 2% cumin. Used my Shun Reserve Damascus 10' slicer. Skirt Steak ala Alton Brown. Cooked directly on the lump charcoal with lump of cherry wood from baxter's. Few minutes on each on each side. Turned out beautifully. Brother in laws H.S. graduation dinner past June. Quinoa salad, brisket, St. Louis Ribs, fully loaded roasted baby potatoes, pasta salad, homemade Asian style coleslaw and quick pickles with onion and sweet peppers.
