My first cook on my new Kamado Joe

So I got to do my first cook on my new toy, overall it was a success. Like most grills it will take a bit to learn how far to have the air intake on the bottom open and the daisy wheel vent on the top open.

I made 4 different kinds of smoked chicken thighs which included rubbed and Sweet Baby Rays sauced, some sauced with Buffalo wing sauce, some marinated in Italian dressing and some marinated in Wine and Herb marinade.

I smoked and grilled some finger length purple potatoes and made a garlic and mustard aioli and finally grilled some eggplant after I had brined it in salt water.

I used the KJ lump charcoal and mixed in some applewood. My daughter couldn't quit raving about the smoke taste on the meat.

Please enjoy the pictures below.

It was very windy and spitting rain here in Richmond yesterday but I was really impressed with how well the Joe did yesterday.

Looks like you are off to a great start!  Next time add a couple pictures of your finished product.  Everyone here is a cooking fanatic, and finished food pictures are desired.  BTW, that lump charcoal looks great; a shame I don't have a local source for that brand.

I wanted to take some finished product shots but the family was hungry!

Great start on getting your Joe all dirtied up and broken in.  You are gonna be having a lot of fun.  Don't forget to stock up on lump for the "off season" before the stores have no inventory because "off season" is a phrase that does not exist in the land of the Kamado.  By more than you think you will ever need as you will be cooking on Joe at least 4 times a week or more.
