Leftovers - Piglet Tacotilla's

Building the Tacotilla layers.

Wild rice mix cooked in taco seasoned tomato soup.

Next add some corn.

Leftover Piglet meat chopped and twice cooked with taco seasonings.

Final layer of 3 cheese Mexican blend.

Warmed in a 500* oven for 6 minutes on a upper rack. Next time I'll use a lower rack. Wanted to test out doing Tacotilla's in the oven as this will probably be my cook when I visit my sister for vacation.

Served with the usual taco fixin's.

I'll have 2 of those tacotilla's please. They look mighty fine.

I owe you at least 2. Just let me know when you're in my neck of the woods.

Tacotilla - love that word you made up, describes it perfectly.

Yum. Great use of leftovers.

I'm getting to the point where I'll put anything in a tacotilla.

I still have more piglet leftovers in the freezer.

How about these taco racks aren't they the best.

Great looking tacos.

Love the taco racks. I have 2. Going to pick me up a 3rd next time I go to HD.

Works great in the kamado, great in the oven and you can squeeze one on the A. Jr if you bend the handles in a little.
