Candied Orange Peel

The Blanching Stage

2 small orange -peeled(remove pulp)

2 cups cold water

Cut peels in small strips. Add to the boiling water. Boil for 3 minutes...

Drain and start process over again.Do this 3 times.

After blanching..add

1 1/2 cold water

1/2 cup sugar

Let it come to boil on high heat..cook 2 minutes..turn back down to med heat and cook for 45 minutes.


When done take fork and pull orange peels from the hot sugar.

Drag eack strip in Crystal sugar and let dry on drying rack.


When dry, put them in a airtight container..will keep for days (that is if you have self control where I dont when it comes to these tasted treats)
