1st Brisket under my belt finally.

Finally got the first brisket done.   

 

I've been wanting to do this for a while, but good brisket is hard to find around here.  It's mostly special order.

We had a neighbourhood bbq last weeekend.  My neighbour wanted to do a brisket on my kamado,  but couldn't get it in time, so he ordered it, and picked it up

last night.

 

It was a 15lb hunk of beautiful meat.  I gave my friend some brisket rub and gave him some pointers.   We put it on around 9PM and had a couple tasty beverages while we monitored the temps for the first couple hours to ensure the temp was stable.  Then left it do it's thing.

 

The pictures were taken at the moment we dropped it on the grill, 15 hours in, and as the 1st cut was made.

 

I kept the grill between 210 and 225, never foiled, and no injections.  Just a dry rub and delicious magical smoke.

 

It was incredibly moist and delicious.   It was like cutting through soft butter with a hot knife.  Everyone ate it with plastic forks & knives.

 

My neighbour invited about 18 adults for a pot-luck.   Everyone raved.  It turned out perfect.  There wasn't a speck of meat left

when everyone was done eating.  I enjoyed just staying back and letting him take the credit.   After all, he did pay for the meat.

Will definitely be doing this again soon.

Look Good!  I cooked a 17lb brisket this weekend too.  What wasn't eaten during the meal was taken home in doggy bags by all the guests.  I got thank-you messages frompeople today while they enjoyed lunch!  I too love cooking, but sharing it is great.  People think that you have preformed some sort of voodoo magic to cook such a great tasting, tender, juicy piece of meat!

that looks real tasty!

 

There were absolutely no leftovers.  People were grabbing the trimmings out from under the knife.   It really did turn out much better

than I hoped for my first brisket.   

 

That said, it wouldn't have been so successful if not for the hours I spent reading tips from the  Guru's, and amazingribs.com

Gosh I wouldn't want to live anywhere I couldn't go to the grocery store and buy a full brisket....Great job! Agree with others great bark!

 

No kidding.  Unfortunately, in Canada, it's not such a common item.  I've never seen brisket in Costco here, it's always a butcher item.  There are a few

places that offer them, but all the places I've called or spoken to, they are a special order item.

      Welp, expecting friends from out of town this weekend and can wait no longer. So, I picked up a Weber Summit Charcoal grill (kamado style) along with a Pit Viper fan. Once the Big Joe arrives I'll have two Kamados!
       
      Anyhow, I tried the new Fireboard 2 Drive on this grill along with a Pit Viper fan for a hot smoked pork belly session.

      I was in a bit of a rush to get things going so I used the fan to stoke the coals up to temperature with a target of 225F. With the Weber bottom vent fully closed and the top vent 1/4 open, the temperature initially overshot about 15 degrees. I brought the temperature down by opening the lid briefly when adding the belly and to make other adjustments (the dips in the graph).
       
      Once things were settled in, though, the temperature was regulated on the order of tenths of a degree around the 225F target . That's pretty awesome.
       
      Sitting at the computer typing emails and monitoring the temperatures on a browser. With the Fireboard 2 Drive and the kamado, this set-up has better performance and regulation than our kitchen oven.

      I’m looking for any tips on how to cook a full packer brisket on my KJ Classic 2.  To date I have only smoked brisket twice; one time each of the Point & the Flat.  After seeing them in person at Costco it doesn’t look like it will fit on my KJ.  How do you make it work?
       
       I am not sure if I posted this question in the correct thread.

      Cooking my first brisket on the KJ Classic 2 and had a lot of trouble with thick white smoke. My process below, if anybody can help me find the mistake it would be much appreciated!
       
      - Loaded KJ with Jealous Devil lump charcoal and mix ~5-7 oak log chunks of medium (?) size. Logs were highly likely kiln dried but I did get them in firewood-like logs from a meat market vs the mass distro grocery store/home improvement bags
      - Used Royal Oak starters and got the lump lit for about 15 minutes, then a couple of the oak chunks caught and I got a decent fire.
      - Closed the top but opened the vent fully to try to let it smoke out and carbonize. Temp jumped pretty quickly to about 350 so I choked it back and got it stable around 260 but the thick white smoke continued for a solid 45+ minutes at which point I had no choice but to start the meat
      - White smoke continued for another hour+ after this, albeit it didnt billow out quite as aggressively. This went on for a couple of hours at least which seemed like an excessively long time.
       
      Thoughts? Advice?

      So I am smoking my first brisket on my Kamado Joe Classic II and pretty well following Johns Brisket 101 video from the Kamado Joe YouTube channel. It has been on about 4 hours at 225 degrees and my dome temp was steady until it started to rise about 30 min ago. It stopped about 250 degrees and seems to be holding steady there now. Any advice on why this happened and if it’s okay? Should I try to lower it? If so, what is the best method. Getting good blueish smoke and have been for most of the cook. Any help would be appreciated.
