magician
One of a kind for sure and will be missed. Hospital I was based at had their annual Manager's Christmas luncheon at K Paul's for several years. Always good food and once we were shocked when he came into the room and explained the menu choices for us. Just an old Cajun boy. His spice line is top notch . wickedcajun
keeperovdeflame
Just saw the notice of his death on the net. Very sad to see him go. Enjoyed watching him cook and hearing him explain how to cook cajun.

Gary J
We always have a supply of his Magic Chef Salt Free seasoning on hand. Between that and potassium chloride salt substitute we always have salt free homes.
WhoDat
Saw him making crawfish etoufee, in person, once. He started by removing the fat from the tails and sautéing it in butter. Dang, crawfish butter!!!! That certainly upped the game in my own étouffée! The man was a culinary giant. Sorry to see him go...
