Red Beans and Sausage with Jasmine Rice

With the rain looking like it wants to settle in the upstate of South Carolina for few days, I wanted to whip up a big old pot of spicy red beans and sausage.  That's my comfort food of choice.


1 lb of dried Red Kidney beans (soaked overnight)

1 lb of dried Black beans (soaked overnight)

1 pack of hot Italian sausage

1 large white onion (chopped)

3 jalapenos (chopped)

1 bell pepper (any color, chopped)

4 cloves of garlic (minced)

1 tsp of ground thyme

1 tsp of cayenne pepper

1 tsp of Kosher salt

1 tsp of ground black pepper

3 Bay leaves

8-10 cups of chicken broth

6 cups of cooked rice (I used Jasmine this time)

1/4 cup green onions for garnish (chopped)

drops of your favorite hot sauce


To thicken up the bean gravy, I added a half can of refried beans during the last 30 minutes.

Good lookin grub. A few years ago my neighbor called and asked if I had some minute rice she could borrow, my answer was I have some real rice you can borrow. She said she would just run to the store, I told her she could have this cooked before she could get to the store and back. So I went over and showed her how to cook a pot of real rice. She now has converted her mother and sister to cooking real Jasmine rice. By far my favorite.
