smilligan66 Posted December 24, 2015 Share Posted December 24, 2015 Hey guys. I found a beautiful 21 pound PRIME rib roast at Costco that I'm gonna cook for x-mas. I was thinking about injecting it with an au jus solution just to add a little more seasoning inside the roast. What do you guys think? Good idea? Thanks in advance. Merry Christmas. andyscalzo Posted December 24, 2015 Share Posted December 24, 2015 I wouldn't inject it. Prime Rib stands by itself. Just fresh ground salt & peppercorns or a nice garlic/herb paste. keeperovdeflame Posted December 24, 2015 Share Posted December 24, 2015 I am with Andy, Build a paste to form a crust on the outside. Cook it slowly at somewhere below 300 until you get an IT of about 120, then give it a quick reverse sear. You shooting for 130 IT. My favorite paste is a mixture of stone ground mustard, fresh ground pepper, kosher salt, garlic, rosemary and thyme. IMO letting the meat stand on it's own is the way to go.
