Curious, at 275 did you got direct or indirect?

Also, 225 IT seems high to achieve the redness you have. Am I missing something?

I did it indirect then reverse seared. You are correct, 225 IT is way to high. I meant 125 IT, sorry for the confusion.

Perfectly cooked.

Is 225 IT too high? I've read pull at 100-110 and sear it up.

Got one on now, because this post gave me the idea.

It looks more like 125 to me, rather than 225.

Thats what I'm thinking.


You are correct. Typo 225 IT, I meant to say 125 IT.
