Vegas
How long do folks rest the brisket after you've cooked it?

BEER-N-BBQ by Larry
A hour is good. I typically hold mine for at least a few hours wrapped in a cooler or in a low temp oven since I plan plenty of time ahead of eating for fluctuations in cooking time. Vegas
Thanks. When making the burnt ends, do you let the point rest before cutting it as well?

No, I'll slice the point immediately off the smoker for burnt ends. No real advantage to resting it. And the point is so freakin' moist anyway that you're not worried about a bit of juice coming out.
