Great idea and they look great. Put a lid on those and you have panzarotti.

Going to use that dough to make some calzones in the near future.

I use this recipe all the time. Works good for deep dish pizzas. I know at least one other person tried this recipe without success. Probably had to do with the rise. I always suggest turning on your oven to the lowest setting possible for about 10 minutes. Then turn it off and proof in the pre warmed oven. Does need the full 2 hour rise time but that gives you plenty of time to get your kamado fully heat soaked and ready.
