Bacon for Appetizers

We all know about ABT's (Atomic Buffalo Turds) and Moinks (Moo-Oinks,  bacon wrapped meatballs), bacon wrapped shrimp and scallops, but I want to share a tip.

 

Center cut bacon. 

 

If you're cooking any type of bacon wrapped appetizer, center cut bacon works really, really well with these things. It has less fat, and cooks faster than regular bacon. It crisps better than regular thin cut bacon on appetizers that might have some ingredients burn faster (I'm looking at you, Pig Shots)  than with regular bacon.

 

Center cut bacon is really good for wrapping anything because of the low fat content. It crisps a heck of a lot faster. That's all.
