Wish me luck... overnight Brisket

Hello Gurus

 

I bought a whole brisket on Friday, trimmed it down tonight. I've done a couple other briskets in the past, this is the largest I've done, just under 12 pounds post trimming. I'm using a simple salt and pepper only rub.  I also cleaned out the Big Joe earlier today, and broke out a new bag of KJ lump.

 

I just placed the brisket on the grill for an overnight-er.  Time for bed soon.

That's a slab...  Hope it turns out great.   You will have a lot of eats ahead of you.   Keep us posted on how it turns out.

Cook once, freeze & store and eat many times...

I just had a first look of my brisket since last night. The kamado temp was lower than I thought it was, settled at 200F, which is better than too high I guess... I've adjust the top vent a wee bit. The brisket is at 138F, and the 'stall' is still to come.

Still cooking at 235F, I think i'm in the stall at 165F.   It's great having a kamado, I've been out running errands this morning knowing the kamado is hold the temp and the brisket is smoking nicely.
